30 Minute Pho

Healthy made easy. This is the perfect nourishing bowl to keep you warm this winter.

This recipe was a throw together whatever was available kind of lunch and it turned out delish so here it is!

1 bunch bok Choy (separated and rinsed)
1 cup edamame beans
1 carrot cut Julienne
125g corn kernels
4 button mushrooms sliced
1 brown onion sliced
2 cinnamon sticks
3 star anise
1 1/2 tbsp soy sauce or tamari
100g Vermicelli noodles (rice noodles would also work)
1.5 full kettles of boiling water
Sriracha to taste
Drizzle peanut oil (olive oil or vegetable oil would also be fine)

Prepare all ingredients as mentioned above.
Boil your kettle.
Over a medium head, drizzle your peanut oil into a medium sized pot.
Add your onion, cinnamon sticks, star anise. Sauté for a few minutes until the onion is translucent.
Add in carrots and mushrooms, continue to sauté. Stir occasionally for a few minutes.
Add the hot water to your pot, along with the soy sauce, sriracha, corn, edamame beans and bok choy.
Add in your noodles, once the noodles are softened serve!
(Remove your cinnamon sticks & star anise)
