Chocolate Crunch Granola

Oats are a great way to keep you fuller for longer and fuel your body for the mornings activities ahead.

This recipe hits allll the chocolate cravings, you can thank me later.

1 cup buckwheat kernels
1.5 cup oats
1/2 cup macadamias
1/3 cup Pepitas
1 cup coconut flakes
1/4 cup cacao powder
1 cup cashews
4 tbsp coconut oil (melted)
4 tbsp maple syrup
1 tsp vanilla extract

Preheat 175 degrees Celsius
Add and mix all dry ingredients in a mixing bowl.
In a seperate bowl, melt coconut oil in the microwave. Add the maple syrup and vanilla extract and whisk through with a fork.
Line two baking trays with baking paper
Spread the dry mixture evenly over the lined baking trays.
Pour the coconut oil/ maple/ vanilla extract mixture over the dry mix and massage through with hands until all mixture is wet.
Spread the granola evenly over the trays.
Place trays in the oven and bake for 25 minutes.
Remove and stir through a few times to avoid the granola burning.
Let granola cool and add to an airtight jar.
