Easy Peasy Corn Fritters

Everyone needs a corn fritter recipe up their sleeve!

These simple and healthy corn fritters are perfect for a snack, breakfast or lunch and are great to pack in your kids lunch boxes!

Fritters:

1 cup corn kernels (strained)

1 zucchini (grated finely)

1/2 onion (diced finely)

1/4 cup chopped parsley

2 eggs 1 1/2 cups plain flour (sifted)

1/2 tsp spiced paprika

Salt & pepper to taste

Olive oil as needed

Garnishes:

1 heaped tbsp Greek yoghurt

1/4 avocado (sliced into cubes)

4 truss tomatoes (cut into quarters)

1 small handful rocket

Salt & pepper to taste

1. Prepare all ingredients as mentioned above

2. Double fold paper towel and place in a large plate to place your cooked fritters on

3. Add all fritter ingredients to a large mixing bowl and whisk together

4. Add 2 tbsp olive oil to a heated frypan

5. Pour fritter batter onto your frypan and flip after 1 minute (or until golden)

Repeat steps 4 & 5 until all fritters are cooked

6. Add garnishes to serve
