Method:
Preheat oven to 175 degrees Celsius
Prepare all ingredients as mentioned above.
Sauté diced onion (and corn if fresh not canned) until onion is translucent.
Add all ingredients except cherry tomatoes to a large mixing bowl. If corn is from a can, strain then add to the mixing bowl.
Line a baking dish with baking paper, grease paper with olive oil spread/ butter of choice.
Pour in your slice mixture, add cherry tomatoes to garnish.
Bake in the oven for 30 minutes or until cooked through.
