Fresh AF Tabouli Salad

Save this salad as a “go to” recipe!

With a hint of mint for an extra flavour kick on the tastebuds, it is the little addition that makes all the difference.

Ingredients:

2 1/2 bunches flat leaf parsley (chopped finely)

1/2 cup mint (chopped finely)

1/4 red onion (diced finely)

1/2 medium cucumber (diced finely)

1 1/2 cups tomato (diced finely)

1/2 cup quinoa (cook as per packet instructions)

1 can chickpeas (strained & rinsed)

3 tbsp extra virgin olive oil

1 lemon (juiced)

Salt & pepper to taste

Method:

Cook quinoa as per packet instructions (let cool before adding to the salad)

Prepare all salad ingredients as mentioned above and toss together

Drizzle olive oil, lemon juice and add salt and pepper for dressing

Toss through again before serving
