Gingerbread Cookies

Is it even Christmas if you haven’t baked gingerbread cookies?

A recipe guaranteed to put smiles on your family and friends faces, and the perfect fun recipe to cook with your kids during the festive season. This year I made a Christmas spice granola and added gingerbread cookies to give to my family and friends (scroll down to find the granola recipe).

Ingredients
3 cups all purpose flour
2 tsp ground cinnamon
1/2 tsp ground nutmeg
2 tsp vanilla extract
1 egg
1 1/4 cup olive oil spread or butter (melted)
1 tbsp ground ginger
3/4 tsp baking soda
3/4 ground cloves
1/2 tsp salt
1/2 cup brown sugar

Icing
1 cup icing sugar (sieved )
2 tbsp milk of choice
1/4 lemon squeezed for juice
Food colouring of choice

Method

Add flour, salt, nutmeg, cinnamon, ginger, cloves and nutmeg to a mixing bowl.
Beat sugar and butter for 2 minutes in an electric mixer until light and slightly fluffy. Add in vanilla extract, egg and beat again for a minute.
Add in flour (gradually) and continue to mix through on a low setting.
Remove dough from the mixer and roll into a ball, wrap in cling wrap and place in the fridge for 45 minutes.
Preheat the oven to 175 degrees Celsius. Line 3x baking trays.
Roll out the dough using a rolling pin and use cookie cutters to make your cookie shapes.
Bake cookies for 10-15 minutes or until golden.
Let cool.
Once cookies are cool, mix all icing ingredients in a small bowl (except food colouring)
Once thickened and smooth, add a few drops of food colouring to decorate your cookies
