Healthier Anzac Biscuits
I woke up this morning planning on diving into assignments but was overcome by the urge to make Anzac cookies!
These are so easy and fast to make and are full of pantry staples (no need to go out and buy 1000 ingredients you’ll never use again).
INGREDIENTS
1 cup wholemeal flour
1 cup rolled oats
1/2 cup desiccated coconut
1 tsp bi carb soda
1 tsp vanilla extract
2 tbsp hemp seeds (optional but highly recommended for that extra nutrients)
80ml (or 1/4 cup + 1/8 cup) maple syrup
150 g olive oil spread
If you have a sweet tooth, add 1 tbsp honey. Anzac cookies are usually pretty loaded with sugar and golden syrup. Maple is a little more subtle.
METHOD
Preheat oven to 170 degrees Celsius
Line a baking tray with baking paper
Add all dry ingredients to a mixing bowl (make sure you sift the flour to remove any lumps. Pour the whole meal flour residue that’s left in your sifter back into the mixing bowl).
In a medium pot, bring the stove to a medium heat. Add the olive oil spread to the pot to melt.
Also pour in the maple syrup and vanilla essence (and honey if you have a sweet tooth).
Stir through.
Add bicarb soda. This will foam up so make sure you continuously stir.
Once all wet ingredients in the pot are mixed through, pour your liquid into your mixing bowl with your dry ingredients.
Stir through to combine your biscuit dough.
Using a tablespoon, scoop your biscuit dough into one hand, pat/ roll your hands together with the dough to form cookie shapes.
Place your cookies on your baking tray.
Bake for 12 minutes or until golden.
