Healthy Snickers Bars
These babies are the perfect sweet treat to curb your cravings, they are SERIOUSLY delicious!
My love language is definitely cooking for people I care about. The entire batch of these is already gone because I wanted my nearest and dearest to try them, and they got such good feedback!
Ingredients:
200g Dark chocolate (i used 70%)
Base
1/2 cup coconut flour
1 cup Raw cashews
3/4 cup Macadamias
1/3 cup Rice malt syrup
1 tsp Vanilla essence
Caramel
12 Medjool dates (pitted)
1/2 cup natural peanut butter
2 tbsp maple syrup
Pinch of salt
1 tsp vanilla essence
Method:
Blitz coconut flour, cashews and macadamias in a food processor until a fine crumb is formed
Add in rice malt syrup and vanilla essence. Blitz until all ingredients bind together.
Place the base mix onto a baking tray and pat down to ensure it is even. Place in the fridge while you prepare the caramel layer.
Add all caramel layer ingredients to your food processor, blitz until a smooth consistency is formed (you may need to stop every so often to ensure the mixture doesn’t get stuck in the shape of a large ball).
Retrieve the base layer from the fridge, spread and pat down the caramel layer evenly over the base layer
Cut your mixture into rectangle/ bar shapes
In a bowl, melt your chocolate in a microwave
Once the chocolate has melted, coat your bars by dipping in them in chocolate, place on baking paper and repeat.
Wait a few minutes until the chocolate has hardened, enjoy!
