Lemon & Coconut Protein Balls

THESE ARE ACTUAL HEAVEN 🙌🏼

Sooo happy with how these turned out. I wasn’t sure whether I should call them lemon cheesecake or lemon & coconut .. they are SO. DAMN. GOOD!

9 medjool dates
3 heaped tsp vanilla protein powder
1 cup raw cashews
1/2 cup desiccated coconut
1 lemon (zest the lemon, then juice it)
2 tbsp water
1.5 tbsp coconut oil (melted)

Cut dates in half and remove the pits.
Soak dates in a bowl of boiling hot water for 5 minutes.
Add all ingredients to a food processor, blitz until a smooth dough consistency is formed.
Separate the dough into small portions and roll with your hands to form your protein balls.
Store in an airtight container at room temperature.
