Loaded Smokey Sweet Potato Fries

… “and do you want fries with that?”

Healthy swaps made easy! Craving a side of fries? Make a healthy swap and use sweet potatoes instead of regular potatoes.

Sweet potatoes are high in beta-carotene, vitamins A, B6, C, potassium and fibre.

Make sure you wash your sweet potatoes and leave the skin on for extra fibre!

Did you know cooking with the skin on helps to reduce leaching of nutrients including beta-carotene and vitamin C?

Ingredients:

2 sweet potatoes (sliced into fries, leave the skin on for fibre!)

2 avocados (mashed)

1 jalapeño (sliced into rounds)

1 tomato (diced finely)

Generous drizzle of olive oil

Generous sprinkle of smoked paprika

Sprinkle of nutritional yeast

Salt and pepper to taste

1/4 lemon (juiced)

Preheat oven to 175 degrees

Celsius Line a baking tray with baking paper

Prep all ingredients as mentioned above

Place your fries onto the baking tray

Drizzle olive oil on top

Sprinkle a generous amount of paprika over the fries

Sprinkle salt and pepper on top

Toss through the fries to ensure all fries are coated with olive oil and spices

Bake in the oven for 20 minutes then turn the fries over and bake them for another 15 minutes or until cooked through

While your fries are cooking, mash your avocados in a bowl with a fork, squeeze in lemon juice, add salt and pepper to taste

Remove fries from the oven and place them on a plate lined with paper towel to absorb any oil residue

Add your fries to a bowl, load with your guacamole, diced tomatoes, nutritional yeast and jalapeños.
