Pro Zoats with caramelised banana & berries

If you are reading this and unsure what this recipe title means.. I bring to you protein zucchini oats!

Do you eat the recommended 5 servings of vegetables and 2 serves of fruit a day?

I’m alllll about sneaking in extra nutrients wherever possible. These Zoats have 1/2 zucchini in them and you can’t even taste it!

You know you’ve made a good recipe when you can’t stop saying “omg this is so good” and running around the house insisting everyone try it.

Ingredients

1 cup oats
1 1/2 cups milk of choice
1/2 zucchini (shredded finely)
2 tsp coconut oil (a fat is required when cooking with protein)
1 heaped tbsp vanilla protein powder
1 banana (sliced in half lengthways)
1 handful of berries
Sprinkle of cinnamon
I tbsp peanut butter
Drizzle of honey
Sprinkle of sunflower seeds
1 1/2 tbsp hemp seeds

Method
Melt 1 tsp coconut oil in a hot pot
Add your shredded zucchini to the hot pot, then add milk, oats, hemp seeds and protein powder. Stir through and let simmer.
While your oats are cooking, melt 1 tsp coconut oil on a hot pan.
Place your banana halves on the pan and drizzle honey ontop, after a minute or when the banana starts to golden, turn over.
Pour your pro zoats into a bowl, place your banana and berries ontop.
Sprinkle cinnamon and sunflower foods ontop.
Drizzle peanut butter to serve.
