Method

In a bowl, whisk all tofu marinade ingredients together.
Drizzle olive oil onto a heated saucepan. Add onion and spinach, cook until the onion is translucent.
Add the crumbled tofu to the saucepan and sauté for 3 minutes.
Pour tofu marinade over the tofu and sauté on a low heat for 4 minutes.
Serve with fresh cherry tomatoes, avocado, coriander, chilli flakes, salt and pepper

Scrambled Tofu

What you will need
350g firm tofu, patted dry and crumbled
1/4 diced yellow onion
Drizzle of extra virgin olive oil
1 handful baby spinach
10 cherry tomatoes (cut in half)
Salt & pepper to taste
Sprinkle of chilli flakes
Coriander for garnish
1 avocado (halved)

Tofu marinade
1/3 cup almond milk
2 1/2 tbsp nutritional yeast
1 Clove garlic (diced finely)
1/4 tsp ground smoked paprika
1/4 tsp ground turmeric
1/4 tsp ground cumin
