Vegan, GF, Chickpea Chocolate Brownies
I had my family do the “official” taste test and they didn’t even know they were VEGAN, GLUTEN FREE oh and also contain CHICKPEAS for that extra nutrients. I am all about adding sneaky ingredients to my treats to make them healthier while eating what my body is craving. Bonus points for the undetected nutrient upgrade.
Ingredients
1 can chickpeas
3 tbsp milk of choice (I used coconut milk)
2 tsp vanilla extract
2 tsp coconut sugar
1/3 cup plain flour of choice (I used gf)
1/2 cup maple syrup
2 tbsp cocoa powder
1 tsp baking soda
Generous sprinkle of salt
3 tbsp coconut oil
chocolate chips to sprinkle on top
Method
Preheat oven to 180 degrees
Melt coconut oil in the microwave
Add all ingredients (except choc chips) to a food processor, blitz until a smooth consistency is formed
Line a baking tray with baking paper
Add brownie mixture to the tray
Sprinkle choc chips over the top to garnish
Cook for 30 mins or until the surface is mildly soft yet spongy (they feel firmer once cooled)
